Chocolate Muffins! Yum!
This is my second post for the day! And i made chocolate muffins today!
I love chocolate so i thought i would make a post about something chocloatey.
In the end I found a recipe and made chocolate chip muffins.
I was very impressed with myself and so were my parents who had the delight of trying them first. They weren't to impressed being test subjects but once they had finished one they were impressed but told me they were a little too rich.
But for my first baking muffin experience the product turned out fairly well. Here is a picture of one of the muffins.

Bacon and Eggs For Three
Hey everyone,
Pat here and just saying sorry for my absence over the past few days. Laptop had a malfunction and had to get it repaired. Meaning i didn't have access to my photos which would make my post look a bit boring. For this you will be getting TWO BLOGS POSTS in one day!!!!
So the first blog for today is bacon and eggs. One of the easiest meals to make which makes it a perfect breakfast when having guests over. My occasion was my sister and her friend was over, so the amazing brother that i am made them bacon and eggs.
I was surprised to have been told that they actually were really good! Which is a first as I'm a terrible cook! So that was a positive start to my day.
Anyway here are some photos of me cooking each individual meal.

Red Velvet Cupcakes

For my first anniversary with my boyfriend I decided to make him red velvet cupcakes!
Red velvet cupcakes are soft and light and have an amazing cream cheese icing.

I used my wonderful silicone moulds that worked perfectly including the heart mounds which gorgeous.
A tip for if you make these, don't put the cream cheese icing on until you ready to eat them, leave the icing in the fridge and the cupcakes in the cupboard as I found that the cupcakes lasted quite a while in the cupboard while in the fridge they dried out. Next time, I will add more food dye as my cupcakes were not quite as red as they were meant to be.
A couple of the cupcakes I made into cute butterfly cakes by cutting off the top and then cutting the top in half flipping the cupcake adding icing and arranging the top to look like wings.
These are a fantastic (and if dyed properly) a stunning, light and fluffy cupcake perfect for any special occasion, or just because you can. Happy Baking!! :D

THE ULTIMATE 'SANGA' - conception time....
INGREDIENTS
1 roasted bred pepper, peeled
4 garlic clovees
5 table spoons of olive oil (extra virgin)
1 table spoon of lemon juice
1/2 table spoon of cayenne pepper
1/2 table spoon cumin
'SANGA'
2 chicken breasts
2 x 6 inch focaccia squares
4 tomato slices
4 bacon strips - well done for the crispiness
6 avocado slices
THIS WEEK I WILL EMULATE THIS.

THE LAST SUPPER.
This was a feed I prepared after training on Monday night.
Cooking prep time - 20 mins
Eating duration - 20 mins
FOOD:
- Chicken tenders w/BBQ sauce
- Spaghetti bowl with penne, lean mince and a bolognese stir through
- Thai red curry w/hokkien noodles
PLUS veggies - trying to be healthy.
End result was me sitting in a food coma for the rest of the night.

Crumbed Chicken Sandwiches

A few nights ago, I discovered a really simple and tasty meal that is just perfect for nights when I get home late from work or uni.
I bought some crumbed chicken pieces, and cooked them up in a fry pan. I cooked more than I would eat, so that I could have some leftovers for lunch or for dinner another night. Then it was really simple to just make a sandwich with some lettuce, cheese and tomato sauce.
One tip I would give you if you were going to do this is to add more oil to the pan than you think you will need... I ended up losing a lot of the crumbs from the chicken when I tried to flip it over, as they stuck to the pan. Also, having the pan at a lower temperature would help with that.
